Spiced Red Lentils with Crispy Potatoes

This cozy and flavorful meal is the perfect vegan comfort food.


Red lentils


Garlic , onion, and scallions

Tomato paste, maple syrup, soy



Heat the oil & spices

Heat the oil over medium heat. Add the cumin seeds and stir until they start to sizzle and pop. Add the ground spices and stir to combine them with the oil.



Sauté the onion & garlic

Stir in the onions and sauté for about 8 minutes, or until the onions are translucent. Add the tomato paste and the garlic, stirring to combine everything well.

Prepare the potatoes

Preheat the oven. Spread the potatoes on a baking sheet and prepare them according to the instructions on the package.


Simmer the lentils

Add the water, lentils, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes. Then, stir in the maple syrup and the soy sauce.


Combine and serve

Serve each portion by placing the fries on a plate, then topping with the lentils.  Add any optional garnishes just before you are ready to serve.
